gago over spinach

chopped garlic on a tablespoon of hot olive oil
add the onions
add the sliced chickens
season with salt and pepper
cook for 3 to 5 minutes til the chicken starts to brown
add half a cup of coconut milk
and half a cup of water
simmer for 10 to 15 minutes
add a teaspoon of curry, cumin and a pinch of nutmeg
season with more sea salt and pepper
stir for 2 minutes
add the chopped basil and italian parsley
mix
add baby spinach til wilted
finally add parmesan cheese

serve with risotto or plain rice.

america's next top model marathon

mushroom pork with spinach stuffed manicotti

*spinach stuffing

cook 4-5 slices of bacon on medium high heat
add crushed garlic
chopped onions
when onions carmelizes, add chopped parsley
and spinach
cook with half a cup of red wine
stir until spinach wilts
then take out of the heat and cool

*manicotti
cook manicotti as directed in its packaging
when spinach cools down
add half a cup of grated parmesian cheese
and mozarella cheese
stuff pasta with the spinach mixture
set aside

*tomato basil saucebed
wash 5-6 roma tomatoes
put in a food processor
add basil
a tablespoon chopped parcel
and salt, pepper to taste
blend them into a puree
then pour half of the mixture into an oven proof plate
place the stuffed manicotti on the tomato sauce
use the remaining sauce over the pasta
add half a cup of mozarella cheese on top
bake on a 300 degree oven for 15- 20 minutes
or until cheese is melted.

*pork mushroom
heat a tablespoon olive oil
add a teaspoon of chopped garlic
and onions
then the pork (which are cut into thin strips, inch long)
add salt and pepper
when the meat starts to brown
add half a cup of red wine
let it simmer for 15 minutes
then add half a cup of chicken stock
and let it summer for another 30 minutes
or until the sauce thickens
add chopped rosemary along with its stalk (which would be removed later)
and 1/3 cup of coconut milk
stir and add salt, pepper to taste
garnish with parsley or green onions

umiiyak si totoy
habang ama niya nalunod
sa sariling dugo
katawa'y naging pira- piraso
sa saksak ng kutsilya
si mamang benny nakagulantang sa lupang
di na niya masasaka pa

umiiyak si totoy
habang ina'y tinadyakan
at nilampaso sa malamig na sahig
nakapikit mga mata
bago bala ay pamasok at lumabas sa kanyang maliliit na ulo
mga matang nasaktan sa kahalayang
sumapit sa pamilya

umiiyak si totoy
habang dalagang kapatid ay hinalay
ang buong pagkababaye minura na't
kinain pa ng kanilang kahayupan
mga sigaw ni nene, humihina sa bawat
baklang halimaw na humahalay sa kanya
hanggang sa wala nang tunog na lumalabas sa kanyang
mga bunganga

just finished watching the documentary film in the sundance channel... i had to write something, the emotions i was feeling after watching the film is both overwhelming and frustrating. so many things are happening all over our country... and most of us could care less about it. i wish i could change that.

pride 2005

June 20-26, a whole week that shattered my perception of oklahoma-er. Inspite of being in the bible belt of america, and aside from the fact, the state is run by the ultra christian right wing... it is comforting to know that they the city is humble and smart enough to embrace diversity, as rainbow flags adorned the lamp post lining Classen Avenue, OKC.

There is not much to say about it... but the struggle of gays, lesbians, bisexuals, and transexuals is not theirs alone. it is high time, that all people take up the rainbow banner and march with people who cant lie to themselves. On with the struggles...
